Banana “Caramel” Tart 🍌 •

Honestly this might be one of my favorite “healthier” desserts I’ve ever made. The picture doesn’t do the flavor justice! Would make it oven and over again especially since it contains all natural ingredients/sugars! It really does make a difference when it comes to the impact on your body. This desserts takes time and patience but the result is WORTH IT! •

Ingredients:
Crust: – 1/2 cup of almonds
– 1 cup of oats – 1/4 cup of coconut oil
– 2 tbsp of maple syrup
– 1 tsp of vanilla extract
– 5 pitted and soaked dates
– 1/2 tsp of sea salt

Banana Filling:
– 3/4 cup of cashews (soaked)
– 1 med ripe banana
– 1/4 cup of coconut cream
– 2 tbsp of coconut oil (melted and cooled)
– 2 tbsp of lemon juice
• “Caramel” Topping:
– 1 cup of pitted/soaked dates (about 8-10 depending on size) – 1/3 cup of almond butter
– 1/4 cup of coconut oil – 1 tsp of vanilla extract
– 1/4 cup of coconut milk •

Directions:
1. Make crust ingredients by adding nuts and oats to a food processor and pulse into a powder.
2. Add the rest of the crust ingredients until a sticky texture is formed
3. Press crust into tart pan
4. Next, make the banana filling by adding filling ingredients to a blender (make sure the cashews have been soaking for 6 hours or flash soaked in boiling water for 2 for a smooth texture)
5. Pour banana filling into chilled crust and place in fridge for 1-2 hours or until set
6. Lastly make the “caramel” layer by adding ingredients to a blender until smooth. Pour as top layer and place back in fridge to chill
7. Top with fresh bananas and almond butter •
