Banana Carrot Loaf •

Quarantine may be letting up, but I’m still baking a loaf a day…anyone else? 🙃 The bananas and carrots in this recipe make the loaf moist and the spices bring out the best flavor! Add some cashew cream cheese icing and the whole loaf can go down in one bite 🍌🥕 Ingredients:
– 3 ripe (mashed) bananas
– 1/2 cup of finely shredded carrots
– 1/3 cup of unsweetened almond milk
– 1/2 cup of pure maple syrup
– 3 tbsp of melted coconut oil – 1 tsp of vanilla extract
– 2 cups oat flour (can use almond flour)
– 1 tsp of baking powder
– 1/2 tsp of baking soda
– 1 tsp of cinnamon
– 1/2 tsp of nutmeg (optional)
– 1 tsp of sea salt •
Directions:
1. Preheat oven to 350 degrees F
2. Whisk together coconut oil, almond milk, vanilla extract and maple syrup.
3. Add in mashed bananas and shredded carrots and mix together
4. Add in the rest of the dry ingredients and mix well
5. Add to loaf pan and bake for 50-55 min
