Black Bean Meatballs

Friday Favorite ❤️ I honestly was a little skeptical to try this recipe because I’m not a die hard fan of black beans and I love my regular meatball recipe, but honestly these were so delicious I would make them over and over again!

They’re the perfect option for someone looking to sub a plant-based option. I ate them on pasta, by themselves and cold- they were just that good. Make sure to mix them with a natural tomato sauce that doesn’t have any added sugars to make this dish as healthy as possible. My favorite to use is @primalkitchenfoods

Ingredients:
– 1 can of black beans (rinsed and drained)
– 1/2 cup of gluten-free oat flour
– 3 tbsp of minced garlic
– 3 tbsp of tomato paste
– 1/3 cup of diced onion
– 2 tsp of paprika
– 1 tsp of chili powder
– 1/2 cumin
– 2 tsp of salt
– 1/2 tsp of oregano

Directions:
1. Preheat oven to 400 degrees
2. Add all ingredients to a food processor and pulse until full combined
3. If the mixture is too wet and sticky, add 1-2 tbsp of oat or almond flour

4. Scoop onto baking sheet (it’s okay if they’re not perfect balls)
5. Bake for 25 minutes (rotating halfway through)
6. To make them extra crispy, sear them in a pan with a little olive oil
