Blue Breakfast Parfaits π
Really on a blue breakfast trend so I hope you enjoy! These blue breakfast parfaits are packed with protein, antioxidants and fiber. Aka the best way to start your day!

Ingredients:
Blue Layer
– 1 frozen banana
– 1 scoop of @better.nutrition vegan vanilla protein
– 1/2 cup of cashew milk
– 2 tsp of butterfly pea powder from @suncorefoods
– handful of frozen blueberries
White Layer
– cashew yogurt from @foragerproject
Blue Top:
– 2 tbsp of chia seeds
– 1/2 cup of cashew milk
– 2 tsp of blue spirulina
– 1 tsp of vanilla extract
– (optional) 2 tsp of maple syrup for sweetness

Directions:
1. Make chia pudding ahead of time by combining all chia ingredients in mason jar, shake well and leave in fridge overnight
2. Make smoothie layer by combining all blue base ingredients to high speed blender and pulse. Pour into glass and Let chill in freezer for 15 min if you want to layer it as such.
3. Add yogurt and chia pudding on top of chilled blue base
4. Top with coconut, almonds and blueberries!
