Blueberry Banana Loaf

Nothing like kicking off a holiday weekend with the best blueberry loaf. Currently on our way to Zion for the weekend and wishing I hadn’t eaten all of this so we could have it for the car ride! πŸš—

Grain-free, refined sugar-free, and dairy-free makes it guilt-free πŸ˜‹

Ingredients:
– 2 ripe bananas
– 1/2 cup of almond or coconut milk
– 2 tsp of apple cider vinegar
– 2 tbsp of lemon juice
– 1/2 cup of coconut oil melted
– 1 1/4 cup of coconut sugar
– 1 tsp of vanilla extract
– 1 cup of oat flour
– 3/4 cup of almond flour
– 1 tsp of baking soda
– 2 tsp of baking powder
– 2 tsp of cinnamon
– 1 cup of fresh blueberries + a little bit of oat flour for dusting

Directions:
1. Preheat oven to 350
2. Whisk together almond milk and apple cider vinegar
3. Add mixture to bowl and whisk in lemon juice, mashed bananas, vanilla extract, coconut oil and coconut sugar
4. Add in dry ingredients and whisk until thoroughly combined
5. Dust the blueberries in a little oat flour to ensure they don’t sink while baking
6. Fold blueberries into batter and add to loaf pan
7. Bake for 1 hr
8. Add some blueberry frosting to the top for the ultimate treat
