Buffalo Chicken Stuffed Sweet Potatoes

Monday night meal prep sorted ✔️ colder weather is calling for comfort food and a good dinner for Monday night football! These stuffed sweet potatoes are healthier than most football meals and if you use @primalkitchenfoods sauces they can be diary-free too!

Ingredients:
– 2 lb of chicken
– 4 sweet potatoes
– 2 tbsp of vegan mayo
– 3 tbsp of hot sauce
– 2 tsp of chipotle seasoning
– 2 tbsp of vegan ranch
– 1 tsp of mixed garlic
– 2 tsp of sea salt
– 1 tsp of paprika

Directions
1. Preheat oven to 375
2. Wash and scrub outside of sweet potatoes then poke with fork all over
3. Bake sweet potatoes for 30-35 min
4. Boil or bake chicken until cooked all the way through
5. Using 2 forks, shred the cooked chicken them mix in bowl with rest of ingredients
6. Remove cooked sweet potatoes from oven, cut in half and scoop out center
7. Fill sweet potato center with chicken mixture and serve with celery sticks and extra sauce
