Butterfly Blue Bites

These chilled bites are vegan, refined-sugar free and gluten-free with a raw crust! Butterfly pea powder is a great way to naturally give your foods a pretty blue hue! Additionally, using soaked cashews creates a creamy, rich filling that you wouldn’t believe!

Ingredients:
Crust:
– 1/2 cup of gluten free oats
– 1/2 cup of cashews
– 1 tsp of vanilla extract
– 6-8 dates
– 1 tbsp of coconut oil

Filling:
– 1 cup of soaked cashews
– 1 cup of coconut cream
– 1 tbsp of coconut oil
– 1 tsp of vanilla extract
– 1 tbsp of cornstarch
– 2 tsp of @suncorefoods butterfly pea powder

Directions:
1. Make raw crust by adding oats and cashews to food processor and pulsing until finely chopped
2. Add rest of crust ingredients and pulse until a sticky texture is formed. Press into loaf pan and place in freezer
3. Make filling by adding soaked cashews (must soak them for at least 5 hrs to blend properly), coconut cream, vanilla, coconut oil and cornstarch to high speed blender
4. Divide creamy filling in two
5. Pour one half of the filling over chilled crust and place back in freezer
6. Add butterfly pea powder to the second half of the filling to create a beautiful blue color
7. Wait until first layer has chilled (30 min) then add blue filling layer to the top and place back in freezer.
8. Cut into bite sized slices just before serving
