Caprese Stuffed Peppers

Easy dinner inspo! Stuffed peppers are one of my favorite meals to cycle into my weekly routine because they’re so easy to make and you can customize them however you like!
Instead of mozzarella, I used @violife_foods feta cheese to make these vegan and topped them with a balsamic glaze at the end!
Ingredients:
– 3 bell pepper
– 2 tbsp of olive oil
– 1 tbsp of minced garlic
– 1 cup of quinoa
– 1/4 cup of cheese of choice
– 1 tsp of salt
– 1/2 tsp of black pepper
– 1 tbsp of lemon juice
– 1/2 cup of chopped tomatoes
– 5 fresh basil leaves
Directions:
1. Preheat oven to 400 degrees
2. Cut the bell peppers in half and pour 1 tbsp of olive oil over the top
3. Bake for 20-25 min
4. While bell peppers are baking, make quinoa according to package directions
5. Add in tbsp of olive oil, lemon juice (optional), cheese, minced garlic, salt & peppers and chopped tomatoes
6. Remove peppers from oven and scoop quinoa filling into each pepper
7. Place back in oven for another 5-10 min
8. Top with basil and balsamic glaze and serve
