Cauliflower Fried Rice Stuffed Pineapple

Some recipes never get old! I’ve posted this a few times before but it’s honestly one of my favorite dinners a great healthy option 💛

Making your own cauliflower rice is very easy!

Ingredients:
– 1 head of cauliflower (1 bag of florets)
– 1/2 of a bell pepper (diced)
– 1/4 cup of peas
– 1/4 cup of minced yellow onion
– 1/4 cup of corn
– 1/2 tbsp of olive oil
– 1 tsp of salt
– 1/2 tbsp of minced garlic
– sesame seeds for topping
– 1/3 cup of @primalkitchenfoods no soy teriyaki (you can use any teriyaki you like but this one is my fav because it’s healthier than the rest!)

Directions:
1. Throw the cauliflower florets into a food processor a pulse until cauliflower pearls are formed- make sure not to over pulse or you’ll end up with fine rice.
2. Pat the cauliflower pearls between paper towels to remove any excess water then add to pan with the olive oil and the rest of the veggies
3. Sauté for 5-7 min then add sauce and seasonings
4. Top with chicken or tofu
