One of my favorite dinners! Also the perfect way to use up all your leftover veggies or groceries from the week!
– cauliflower rice
– Brussel sprouts
– grain blend
Preheat the oven to 400 and cook the onions, zucchini, broccoli and Brussel sprouts on a sheet pan for 15-20 min. Meanwhile, cook the cauliflower rice and sauté the kale over the stove.
