Healthier Lemon Cookies 🍋
All the warmer weather lately has me missing my favorite citrus recipes. These healthier lemon cookies are soft and kind of taste like a lemon muffin top. Paired with some dairy-free cream cheese frosting, you cant go wrong!
– 2 tbsp of coconut oil
– 2/3 cup of maple syrup
-1/3 cup of fresh lemon juice
– 1 tbsp of lemon zest
– 1 tsp of vanilla extract
– 1 1/2 cup of almond flour
– 1 cup of oat flour (gluten-free)
– 1 tsp of baking powder
1. Preheat oven to 350 degrees
2. Whisk together coconut oil, maple syrup, lemon juice, lemon zest and vanilla extract.
3. Mix in the rest of the dry ingredients
4. Scoop onto cookie sheet and bake for 12-15 min
