Morning Glory Breakfast Cake

Cake for breakfast on Monday is necessary. But also a little less guilt-ridden with this breakfast cake that includes fruits and veggies! 😋

Ingredients:
– 2 eggs
– 1/2 cup of pure maple syrup
– 2 tbsp of lemon juice
– 1 tsp of almond extract
– 2 cups of almond flour
– 1/2 cup of GF oat flour
– 1 tsp of baking soda
– 1/2 tsp of salt
– 1 tsp of cinnamon
– 3/4 cup of shredded zucchini
– 3/4 cup of blueberries (dusted in flour)

Frosting:
– 1/2 cup of dairy-free cream cheese from @miyokoscreamery
– 2 tbsp of almond milk
– 2 tbsp of lemon juice
– 1/4 cup of pure maple syrup or use powdered sugar for an easier option

Directions:
1. Preheat oven to 350
2. Whisk together the eggs, lemon juice, maple syrup and almond extract.
3. Combine almond flour, oat flour, baking soda, salt and cinnamon in a separate bowl then slowly whisk into wet mixture.
4. Squeeze excess water out of shredded zucchini first then fold into batter with spatula.
5. Fold in blueberries
6. Pour in 8×8 pan and bake for 35 minutes
7. Make frosting by whipping together ingredients. Maple syrup can be used for frosting for a healthier and more natural option however it’s a little harder to get the consistency correct.
8. Top with blueberries and serve!
