Oatmeal Cinnamon Rolls

Nothing like a naturally pink cinnamon roll to get you through hump day. I didn’t have any active yeast (what you usually add to cinnamon rolls to make them puff) so I tried a recipe using oats and even though the result doesn’t taste exactly like a fluffy cinnamon roll, they were still delicious! They tasted like a cinnamon oatmeal bite.

Ingredients:
Rolls:
– 2 cups of gluten-free oats
– 3/4 cup of almond milk
– 3 tbsp of vegan butter (I like to use @miyokoscreamery)
– 3 tbsp of coconut sugar
– 1 tsp of cinnamon
– 2 tsp of baking powder
– 1/2 tsp of salt

Filling:
– 1/2 cup of coconut sugar
– 3 tsp of cinnamon
– 2 tbsp of vegan butter

Pink Icing:
– 4 tbsp of vegan butter
– 1 tbsp of chilled coconut milk
– 1/2 cup of powdered sugar
– 1 tbsp of pink pitaya powder


Directions:
1. Make roll base by first adding oats to a food processor or blender to make oat flour
2. Add the rest of the roll ingredients and pulse until dough is combined
3. Chill dough in freezer for 15 min
4. Preheat oven to 350 degrees
5. Once dough is chilled, roll out on parchment paper
6. Whisk together filling mixture and spread onto flattened dough
7. Roll dough into a long log then cut into individual rolls
8. Place in baking dish and bake for 18-20 min
9. Whisk together icing ingredients and pour over the tops of the rolls once removed from oven
10 Serve immediately or store in fridge for a sweet breakfast
