Peanut Butter Monster Collagen Muffins •
These yummy morning muffins satisfy every peanut butter cup craving and have the added bonus of collagen! Seriously one of my favorite recipes EVER!! 🥜

Ingredients: – 1 cup of all natural peanut butter
– 3 eggs
– 1/3 cup of almond milk
– 1/4 cup of coconut sugar – 3/4 cup of almond flour – 2 scoops of collagen (I used @primalkitchenfoods peanut butter collagen)
2 tbsp of cornstarch
– 1 tbsp of coconut flour
– 1 tsp of baking soda
– 1/2 tsp of baking powder
– 1/2 tsp of salt
– 1/2 cup of chocolate chips, peanut butter chips or mini peanut butter cups (I used all 3) •
Directions:
•
1. Preheat oven to 350
2. Whisk together peanut butter, eggs, milk and coconut sugar in a bowl
3. Add the rest of the ingredients (aside from chocolate chunks in a separate bowl and mix together)
4. Add the dry mixture to wet mixture and mix well. If mixture is too thick add a little extra almond milk
5. Fold in the chocolate chunks
6. Add to muffin tins and bake for 15-17 min.
