Purple Power Bowl

Beautifully and naturally colored Vegan Buddha bowl 😋 You’d be surprised what veggies you can find when you roam the produce of your local grocery store. A lot of them carry unique veggies like purple cauliflower, purple sweet potatoes and purple carrots!

I have to give credit to @stefanielnelson for turning me onto forbidden rice (black rice pictured underneath). Although it tastes the same as regular rice, forbidden rice is higher in antioxidants and protein. Plus it’s a fun color to add to any meal.

Ingredients:
– 1/2 head of purple (or reg) cauliflower
– 3 purple carrots
– 1 purple onion
– 1 purple sweet potato
– 2 tbsp of olive oil
– 3 tsp of salt
– 1.5 tsp of ground pepper
– (optional) 2 tsp of garlic powder
– 1 cup of forbidden rice
– 1/2 pack of tofu

Directions:
1. Preheat oven to 400 degrees
2. Chop vegetables and place on baking sheet
3. Drizzle with oil and spices and place in oven for 20-25 min
4. While veggies are cooking, prepare forbidden rice according to package
5. While rice is cooking, place tofu on baking sheet and place in oven with veggies for 10-15 min (or sauté on stovetop)
6. Once veggies, rice and tofu are done cooking arrange in bowl (should make 2-3 servings)
