Purple Stuffed Cabbage Rolls

N a t u r a l l y purple 🙋🏼‍♀️ in case you didn’t know, all of the food I make is naturally colored 🙃 There are so many amazing foods out there that we don’t even realize exist! One of my favorites is purple cauliflower 😍

These stuffed cabbage rolls are not only so easy to make, but they’re also clean-eating and the perfect way to meal prep for the week! You can add more to the “filling,” but I chose to kept mine very clean and simple!

Ingredients:
– 1 head of purple cabbage
– 1 head of purple cauliflower
– 1 onion
– 1 lb of ground chicken or 1 pack of tofu
– 2 tsp of olive oil
– 2 tsp of sea salt
– 1 tbsp of minced garlic
– 2 tsp of Italian seasoning
– 1 tsp of black pepper

1. Preheat oven to 400
2. Cut the base off the cabbage
3. Boil a large pot of water and place the cabbage into the boiling water for 8 min
4. Make cauliflower rice by add cut cauliflower florets to food processor and pulse until rice size
5. While the cabbage is boiling, add 1 tsp of olive oil to stovetop pan and cook the ground chicken over med heat (or sauté tofu)
6. On another pan (or same once chicken is done) add tsp of olive oil and sauté chopped onion
7. Add cooked ground chicken, sautéed onions, cauliflower rice and all seasoning to bowl and mix
8. Remove cabbage from boiling water and peel off leaves (they should be soft enough to fold)
9. Stuff each cabbage leaf with mixture, fold and place in baking dish
10. Cook cabbage leaves for 13-15 min
11. Remove from oven and serve
