Sweet Potato Barbecue Chicken Sliders

Happy Hump Day 😊 As I reflect and process everything I’ve seen, read and learned over the past week it’s been insightful to take a break from my normal food posting or wellness feed. I’ve learned a lot, but I’m not done and I think it’s important everyone know that.• These sweet potato sliders are the perfect summer cookout appetizer or meal. I used @primalkitchenfoods barbecue because it has no added sugar, tastes amazing, plus makes these bite-sized delights Whole 30 approved!• Plus they’re super easy to make!
Ingredients: – 2 medium sweet potatoes
– 1 lb of skinless chicken breast – 1/4 cup of @primalkitchenfoods barbecue sauce
– 1/3 cup of cabbage – 1 tsp of sea salt
– 1 tbsp of olive oil
– 1/2 black pepper – 1 tsp of garlic powder

Directions:
1. Preheat the oven to 400
2. Wash and cut sweet potatoes into 1/4” rounds
3. Place in bowl and coat in olive oil and seasonings
4. Place seasoned sweet potato rounds on baking sheet and cook for 15 min, then remove, flip and cook for another 10 min
5. To cook the chicken I make it easy by just sticking it in a baking dish and cooking it at the same time as the sweet potatoes. You can also cook it in a slow cooker or on the stovetop. Cook for about until no longer pink in the middle about 25 min (about the same time as the sweet potatoes)
6. Remove chicken from oven and shred with two forks. Add heated barbecue sauce and mix together
7. Assemble sliders with bun, chicken, cabbage and a top bun. Add other toppings if desired•
