Tomato Flatbread 🍅


Tomatoes are an incredible fruit (not veggie) that are packed with Vitamin C and potassium. They’re also the perfect thing to eat outside on a warm summer day ☀️

I’ve never tried making my own flatbread from scratch, so it was definitely an experiment but the result was pretty yummy! The crust was quite soft, but using oat flour makes the taste very hearty and natural.

Ingredients:
Flatbread:
– 1 3/4 cup of oat flour
– 1 cup of water
– 1 tsp of baking powder
– 1 tsp of garlic powder
– 1 tsp of onion powder
– 1/2 tsp of thyme
– 1/2 tsp of rosemary
– 1 tsp of sea salt
– 1/2 tsp of black pepper

Toppings:
– 1 tbsp of olive oil
– 2 cups of chopped mini tomatoes
– 1/4 cup of feta cheese (can use @violife_foods dairy-free)
– 1 cup of mini chopped sweet peppers
– balsamic glaze

Directions:
1. Preheat oven to 425
2. Combine all flatbread ingredients in a food processor and pulse until thick dough is formed
3. Roll out dough into flatbread formation and place on baking sheet
4. Drizzle tbsp of olive oil over flatbread and place in oven for 25 min
5. Remove from oven and place chopped tomatoes, peppers and feta cheese on flatbread and place back in oven for 10-15 min
6. Remove from oven and drizzle with balsamic glaze
