Turmeric Chickpea Blondies
The name of these bars is probably putting a a funny look on your face as you read it, but don’t let that steer you away from trying some of the best blondies I’ve ever made!• If you’ve never had a chickpea blonde, you have to try. You can’t taste the chickpeas at all and the result is still super sweet, but this secret ingredient makes them so thick and chewy. They’re amazing!• I used the turmeric cashew butter recipe I just posted last week, but if you don’t feel like making your own, these treats will taste just as good with regular cashew or almond butter!• Ingredients:
– 1 can of chickpeas (drained and rinsed)
– 1/2 cup of turmeric cashew butter (or any kind of nut butter – 1/3 cup of maple syrup
– 1 tsp of vanilla extract
– 1/4 cup of oat flour
– 1/2 tsp of baking powder
– 1/2 tsp of baking soda
– 1/4 tsp of salt
– 1/2 tsp of cinnamon if using turmeric cashew butter (1 tsp of using regular) – 1/2 cup of mini chocolate chips (I use @enjoylifefoods)

Directions:
1. Preheat oven to 350 F
2. Add chickpeas, maple syrup, cashew butter and vanilla extract to food processor or high speed blender
3. Once mixture is completely smooth, add in the rest of the ingredients except the chocolate chips
4. Fold chocolate chips into batter using a spatula or spoon
5. Scoop mixture into 8×8 greased pan
6. Bake for 25-30 min
