Vegan 7 Layer Bars •

So technically these are a healthier version of 7 layers bars because I used a nut crust instead of graham crackers + butter and all natural date paste instead of caramel, but sometimes you gotta indulge so I topped them with all my favorite (not so healthy) toppings 🤗 Gotta get through Hump Day somehow!!

Ingredients:
Crust:
– 1 cup of pecan pieces
– 1 cup of oats (gluten free preferably)
– 2 tbsp of coconut oil
– 1/4 cup of maple syrup
– 1/2 tsp of baking soda
– 1 tsp of vanilla extract
– 1/2 tsp of sea salt
– 1 tsp of cinnamon “Caramel” Layer:
– 1 1/2 cup of pitted dates (for best results soak in hot water for 10-15 min)
– 2 tbsp of water
– 1/2 tsp of vanilla extract
– 1/2 tsp of sea salt

Toppings:
– unsweetened coconut
– chocolate chips
– butterscotch chips – pecan pieces – cookie dough bites
– peanut butter drizzle •

Directions:
1. Preheat oven to 350 F
2. To make base layer first add pecans and oats to food processor and pulse
3. Add in the rest of the crust ingredients and pulse until sticky mixture has formed. Add a little coconut oil if not sticking together enough.
4. Press crust down in parchment lined 8×8 pan
5. Bake for 10-12 min
6. Make date paste by adding soaked dates, water and vanilla to food processor and pulse until a creamy texture is achieved
7. Remove crust from oven and begin the layers.
8. Add the date paste first then layer on the toppings or toppings of your choice (I recommend starting with the peanut butter drizzle and coconut) ❤️❤️❤️
