Vegan Chocolate Lavender Cupcakes

Cupcakes for breakfast? Chocolate cupcakes don’t have to be a sin with this healthier version of your favorite dessert. I used @beautybarchocolate to add a lavender flavor to these yummy treats too!

It’s the weekend… let yourself indulge in some chocolate 🍫 I added maqui berry to the frosting to naturally give it that pretty purple hue πŸ’œ

Ingredients:
– 1 1/2 tsp of apple cider vinegar
– 1 1/4 cup of almond milk
– 1 1/3 cup of coconut sugar
– 3 tbsp of unsweetened apple sauce
– 1 tsp of vanilla extract
– 3 squares of lavender @beautybarchocolate melted
– 1/4 cup of coconut oil
– 1 1/2 cup of oat flour
– 1/2 cup of cacao
– 1 tsp of baking soda
– 1/2 tsp of sea salt

Directions:
1. Preheat oven to 350
2. Whisk together apple cider vinegar and almond milk and let sit for a minute
3. Whisk almond milk, vinegar mixture with coconut oil, coconut sugar, applesauce and vanilla
4. Whisk in melted chocolate
5. Next mix in dry ingredients
6. Scoop into cupcake liners and bake for 15-18 min
7. Before frosting you can dip the tops of the cupcakes in melted chocolate for the ultimate chocolate cupcakes!
