Vegan Samoa Cookie Bars

Girl Scout cookie season lasts all year long with these decadent bars. These bars are easy to make, contain NO white, refined sugar and are the perfect go-to for someone who’s always shuffling through the pantry for boxed cookies.

Ingredients:
Crust: – 1/3 cup of coconut oil
– 3 tbsp of maple syrup
– 1 tsp of vanilla extract
– 1 cup of almond flour
– 1/4 cup of coconut flour – 1/2 tsp of baking powder
– 1/2 tsp of sea salt

Filling:
– 1 1/2 cup of toasted unsweetened coconut
– 1/2 cup of almond butter
– 1 cup of pitted dates (about 12-15 dates;soaked)
– 1/4 cup of water
– 1 tsp of vanilla extract
– 1/2 tsp of salt – 1 bar of @beautybarchocolate •

Directions:
1. Preheat oven to 350
2. Add dates to warm water to soak while you make the crust
3. Mix crust ingredients together until dough is formed.
4. Press dough into parchment lined 8×8 and bake for 15-18 min
5. While cookie crust is baking make filling by adding dates, water, vanilla and almond butter to a food processor and pulsing until gooey paste is formed
6. Add in the toasted coconut and salt and mix until combined
7. Pour over the top of the cooled cookie crust and refrigerate for approx 1 hr
8. Remove from fridge and cut into squares. Dip the bottom of each square in melted chocolate (I like using @beautybarchocolate) and drizzle extra chocolate on top
