Vegan Taco Zucchini Boats ๐ŸŒฎ

Friday night dinner sorted. These taco stuffed zucchini boats are an fantastic way to make tacos healthier! I used @beyondmeat for a vegan filling and added @traderjoes taco seasoning to make it taste exactly the same as my normal tacos! @primalkitchenfoods olive oil spray is great for cooking and their vegan mayo helps to make the best Sriracha aioli on top! ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Ingredients:
– 4 medium zucchini
– 1 lb of @beyondmeat (or two patties)
– 1/4 cup of corn
– 1/2 cup of diced onion
– 1/4 cup of black beans
– 1/4 cup of chopped bell pepper
– guac for topping (homemade)
– Sriracha suave (3 tbsp of @primalkitchenfoods vegan mayo, mixed with 1 tsp of hot sauce and 1/2 tsp of chipotle seasoning)

Directions:
1. Preheat oven to 400 degrees
2. Cut zucchini in half lengthwise and place in olive oil-sprayed dish
3. Using a spoon, scoop out the centers of the zucchini
4. Bake for 15 min while you make filing
5. Cook the beyond meat in one pan over med heat in stovetop
6. Saute the onions and bell peppers in another pan with 2 tsp of olive oil, add in beans and corn and cook for 5 min on stovetop
7. Add taco seasoning and veggie mixture to the cooked meat or fake meat
8. Scoop meat filing into zucchini boats. (If topping with cheese, put filled zucchini boats back in oven for 5-7 min)
9. Top with guac and Sriracha sauce ๐Ÿ˜‹
